- Someone asked for a vegetarian chili recipe. This one is very
- good.

- Three Bean Chili

- 1/2 red onion 1-2 T. vegetable oil
- 1/2 white onion 2 t. chili powder
- 4-6 cloves garlic 1-2 t. cumin
- 2 celery stalks 1-2 oz. tequila
- 1 green bell pepper 2 cans mexican-style stewed tomatoes
- 2 carrots 1 can black beans
- 6 mushrooms 1 can kidney beans
- 1/2 yellow serrano chili 1 can garbanzo beans
- 1 red jalapeno chili

- Finely chop veggies (a whirl or 3 in the food processer works). Heat oil
- in a large pot and saute veggies and spices until the onion begins to get
- translucent. Add tequila to the pot, and take a good slug off the bottle.
- Add tomatoes (with liquid). Add beans, reserving juices. Add some of the
- bean juice, if and when needed. Simmer for about an hour.
